Pizza Bake

1 lb sausage - cooked and drained
3/4 c pizza sauce
1 1/2 c shredded mozzarella cheese
4 oz sliced fresh mushrooms (optional)
1/2 med onion chopped (optional)
sliced black olives (optional)
pepperoni slices
green bell pepper- diced (optional)
pineapple (optional)
cheese for topping

mix sausage and sauce together in the bottom of an 8x8 casserole dish. Top with cheese. Add additional toppings. Top with small handful of additional cheese. Bake, uncovered at 350 for 25 minutes

Baked Buffalo Breaded Chicken

3 lb chicken tendorloins
1/4 c salted butter (melted)
1 T. hot sauce
2 tsp siracha

breading:
1/2 c briana's baking mix
1/2 c grated parmesean
2 tsp garlic salt
1/2 tsp baking powder
1/2 tsp paprika

INSTRUCTIONS:
1. Combine the chicken, melted butter, hot sauce and sriracha in sealable plastic bag, toss and coat
2. Whisk breading ingredients together and dip each piece of chicken, coat both sides. Place on greased backing sheet and bake at 375 for about 25 minutes or unto cooked through.

Chocolate Overnight Oats

1/2 c old fashion oats
1 T cocoa powder
1/8 t salt
1/8 t stevia extract powder
1 c unsweetened almond milk

Jumbo Pumpkin Pie Pancake

INGREDIENTS:
2 eggs
3 T. plain pumpkin puree
1/2 tsp vanilla extract
2 T. golden flaxmeal
1 T. oat fiber
1 tsp cinnamon
1/4 tsp baking powder
1/8 tsp ground cloves
1/8 tsp salt
2-3 doonks pure stevia extract powder

toppings: butter, cream cheese, pumpkin spice syrup, normal syrup

Succulent Barbacoa Beef

INGREDIENTS
2.5-3 lbs beef chuck roast, cut into thirds
1 onion, cut into chunks
1-3 chipotle pepper in adobo sauce from a can
4-6 minced gloves garlic
2-3 tsp lime juice
3 Tbsp apple cider vinegar
3/4 c water or beef broth
1 Tbsp ground cumin
2 tsp dried oregano
1.5 tsp salt
1 tsp black pepper

INSTRUCTIONS:
Place beef in bottom of crockpot. Put all other ingredients in blender and blend well, pour over beef. Cover and cook on low for 7-8 hours. Break beef apart once cooked.

Jalapeno Popper Chicken Casserole

main part:
8 oz cream cheese
1/2 c chicken broth
1/2 c mayo
1/2 c sour cream
top of 1/2 bunch of cilanto
1 tsp garlic poweder
1/2 tsp salt
1/2 c jalapeno
1/2 c shredded cheddar
2 lbs chicken breast cooked and chopped

topping:
1/4 c shredded cheddar
3/4 c crumbled bacon
1-2 thinly sliced and seeded jalapeno

INSTRUCTIONS:
1. Blend first 8 ingredients until smooth
2. Add cooked chicken
3. Pour mixture into greased casserole dish. Add topping
4. Bake at 350 for 35 minutes or until bubbly and hot

Reuben in a Bowl

INGREDIENTS:
1 very large head green cabbage or 2-3 (16 oz) bags coleslaw mix
2 T butter
2-3 (14.5 oz) cans drained squerkraut
2 tbs turkey or beef pastrami (sliced)
3-4 c shredded swiss cheese

dressing
1/2 c + 2 T mayonnaise
5 T ketchep
6 dashes hot sauce of choice
6 T dill relish
2 t gentle sweet

INSTRUCTIONS:
1. Place cabbage in a large skillet with butter and cook over medium heat until tender
2. Add the sauerkraut and heat through
3. Add the pastrami slices and continue to heat for 10 minutes
4. Add 3/4 c cheese and stir. Lay the rest of the cheese on top and heat until melted. Spoon mixture into bowls.
5. Mix the ingredients for the dressing, spoon over mixture and serve.
